¼ cup olive oil
1 large onion, chopped
10 cups water
DIRECTIONS:
In a large pot, Sauté onion in olive oil until tender. Add water; bring to a boil. Add soup mix and contents of spice packet, cook at a slow rolling boil for approx. 1 hour, or until beans have reached the desired tenderness. Add more water if necessary. Salt to taste. Makes 8 – 1 cup servings.
